Fry chicken, oil and garlic. Once done, diced chicken and place back into frying pan. Adding remaining ingredients and fry for 10 minutes on medium heat.

Vegetable Brushetta Pork Chops

Nice healthy way to eat pork chops! Drizzle with Balsamic vinegar and crumble feta cheese if you like! I cant have that yet so...maybe later!
3 Butterfly Pork Chops (cut in half)
1 tsp Sea Salt
1 tsp Salad & Vegetable Seasoning
1 Garlic Clove (chopped)
1/4 tsp Pepper
1/4 cup Baby Egg Plant(diced)
1/4 cup Fresh Plum Tomato (diced)
1/4 cup Zucchini (diced)
2 Asparagus stems (chopped)
1/4 cup Green Pepper (diced)
1/4 cup Bean Sprouts
2 tsp Grapeseed Oil
Fry pork chops with sea salt, garlic, and seasoning with 1 tsp oil.
Saute veggies with 1 tsp oil and pepper minus the tomatoes for 5 minutes on meduim high. Add tomatoes once veggies are soften. Top the pork chops and enjoy!

Strawberry Dream Cake

Happy Birthday baby!!
1 box Angel Food Cake
1 1/4 cup Water
2 pkg Cream Cheese
1 cup Whipping Cream
2 cups Icing Sugar
1 tbsp Vanilla
1 tbsp Maple Syrup
10 Strawberries
1 can Strawberry pie filling
1 pkg sliced Almonds
Preheat oven 375F
In a bowl, add the angel food cake mix and the water. Beat until all blended. Pour into 2 8" round cake pans ungreased.
Bake until golden brown and top is cracked. Take out oven and cool for 30 minutes.
In another bowl, add cream cheese, icing sugar, vanilla, maple syrup and whipping cream. Whip up until light and fluffy, all combined together.
Open pie filling and almonds. Wash and slice strawberries in half.
Take one cake place on plate. Empty all but a 1/2 cup of pie filling on the top of cake. Spread evenly on cake. Add 2 scoops of icing on filling and spread evenly. Get the other cake and place on filling. With the rest of the icing cover all sides. Sprinkle almonds around.
Top the rest of the pie filling in the middle of the cake. Place strawberries around and sprinkle more almonds!

Lettuce Burgers

I'm eating healthly! Instead of bread, I used romaine leaves!! mm mm and I served with stirfry veggies!
1 lb extra-lean Ground Beef
1/4 tsp Sea Salt
1 tsp Italian Seasoning
1 tsp Garlic Powder
1/4 tsp Pepper
1 Bunch of Romaine Lettuce
Mix burgers together well then Bbq, bake or fry! Add burger to romaine leaf and fold! Enjoy!

Shrimp Pasta Salad

Summer felt like it was here today! So I made shrimp pasta salad and cheesy crab for supper!
3 cups cooked Penne Pasta (or your favorite)
1/2 cup Red Pepper
1/4 cup Green Onion
1 Shrimp Ring
3/4 cup Feta Cheese (crumbled)
1/4 cup Parmesan Cheese
3 Large Eggs (hard boiled)
3 tbsp Bacon bits
1 cup fat free Mayo
1/4 cup Paul Newman's Roasted Garlic Parmesan Salad Dressing (or your favorite oil based dressing)
On high heat, in a large pot of water, cook the pasta. You can add the eggs in the pasta or in a separate pot boil for 7 minutes. Once eggs are done, place in a small bowl and place in freezer to cool down.
Meanwhile chop up the red pepper and onion. Once pasta is cooked (within 10 minutes), strain and rinse under cold water to stop the cooking time and to cool the pasta down. Take the egg out of the freezer and chop up.
In a large bowl, add pasta and the salad dressing, mix together so the noodles don't stick together. Add in the mayo, hard boil eggs, green/red peppers, green onion, feta cheese, parmesan cheese, shrimp and bacon bits. Mix up well and place in fridge for an hour or until cold.

Ravioli with Tomato Garlic Sauce

Wonton wrappers = Ravioli!! If you dont have time to make pasta, try the wonton wrappers!! I made big ones with 2 wrappers but you can just use 1 and fold it to seal the edges!
FILLING:
1lb Ground Lean Beef
1 large Onion (diced)
2 cloved of Garlic (finely chopped)
2 tsp Italian Seasoning
1/4 tsp Salt
1/4 tsp Pepper
1/2 cup Fresh Baby Spinach (chopped)
2 tbsp Parsley
1/2 cup Parmesan Cheese
1/2 cup Feta Cheese (crumbled)
1 cup Cottage Cheese
1 pkg Wonton Wrappers
1 egg (for egg wash)
SAUCE:
2 pints Grape Tomatoes
10 cloves of Garlic
2 tsp Italian Seasoning
4 tbsp Olive Oil
1/2 tsp Salt
In a large frying pan, brown up the beef, garlic and onion with the seasonings on medium high heat until done. Place beef in food processor if you like for finer beef. Fold in the cheese and mix. Place 1 wrapper down and run egg wash along the edges. Put a teaspoon of filling in the middle and top with another wrapper and seal the edges together. Boil for 4 minutes in lightly salted water.
Preheat oven 450F
In a roaster, add the grape tomatoes and the cloves of garlic (leave on the skin), coated in olive oil and roast in the oven for 20 minutes.
Take the garlic out of the skins and mash it with some salt in a bowl. Take some of the water your pasta is cooking in and stir the garlic into the water with a fork to break it up.
Add the tomatoes and mash it all up. Add in seasonings mix well, but really you add in any herbs you prefer. Slowly add in some water, how much water you add will determine how thick you want your sauce!

Whole Wheat Glazed Cinnamon Rolls
These are not the ultimate cinnamon rolls but they are still yummy! I drizzled the icing on as soon as they came out of the oven, hense it looks like there is hardly some there but there is lots! Its to get that glazed look lol
1 cup Water (warm)
2 tbsp Butter
2 cups Whole Wheat Flour
1/2 cup Sugar
1 tsp Salt
1 pkg Yeast (quick rise)
Add to bread maker to the dough cycle. or food processor and let rise in warm spot for 30mins.
On a light floured surface roll out the dough. Spread 2 tbsp butter, sprinkle 4 tsp cinnamon and 1/2 cup sugar. Roll tightly and cut. Place on greased 9x13 pan and let rise for 1 hour or until its double its size.
Bake at 400F for 20 minutes or golden brown.
Cool and drizzle (combine 1 cup icing sugar, 1 tsp vanilla and 2 tbsp milk) icing over rolls.

Baby Spinach Relish with Bacon Hotdogs

Yum! Dress up those plain ole boring hotdogs with flavor!!
1 cup Fresh Baby Spinach (chopped)
1 Onion (diced)
1/2 Red Pepper (diced)
3 tsp Bacon Bits
1 tsp Olive Oil
1/2 tsp Garlic Powder
Dash of Salt and Pepper
Fry all together and topped the hotdogs! I sprinkled cheddar on mine!

Potato Sausage Cakes

mm mm good! Hot italian sausage adds a spicy zing that you'll be going back for more! Next time I think I'll use the mild italian sausage as this hot..is hot! LOL Meatballs chopped up would be awesome too!
1lb Ground Hot Italian Sausage
1 Green Onion (diced)
1 tbsp Parlsey (chopped)
4 Large Red Potatoes (peeled and sliced)
2 Large Carrots (peeled and sliced)
1 medium Onion (diced)
1 cup fresh Baby Spinach (chopped)
1/2 cup Butter
2/3 cup Whole Wheat Flour
1/4 tsp Salt
Boil carrots and potatoes together until soft. Mashed together with 1/4 cup of the butter and salt. Chunks of carrot is great!
Meanwhile in a fry pan, fry sausage, parlsey and green onion. Once sausage is half cooked, add in baby spinach and onion. Fry until onion is cooked, about 7 minutes.
Fold in the sausage mixture to the potatoes and carrots. Chill for 30 minutes or long enough to handle cause you have to form them in patties. haha Once cooled form into patties and sprinkle the flour until both are covered.
In a clean frying on med high heat, melt the remaining butter and fry cakes until golden brown!

Brownie Caramels with Whip Cream

easy to make and delicious!
1 pkg Chocolate Fudge Cake
3 eggs
1/4 cup Oil
1 can Sweetened Condensed Milk
1 bag Chocolate Chips
1 cup Whipping Cream
1 tsp Vanilla
1/3 cup Icing Sugar
1/2 cup Caramel (thick topping kind)
Crushed Candy Bar (I used crispy crunch)
Preheat oven 375F
In a bowl, with hand mixer, add whipping cream liquid, vanilla, and icing sugar. Whip until its light and fluffy, about 5 minutes. Set in fridge to chill, covered.
In a sauce pan on medium heat, place sweetened condensed milk and chocolate chips. Stir until chocolate chips are melted. Set aside to cool down.
In a bowl, beat the cake mix, eggs, and oil together. Fold in the chocolate mixture, blend really well.
Grease mini muffin tin and bake muffins for 5-7 minutes or until toothpick approved. Makes 48 mini muffins. As they cool, they will deflate alot to form a pocket for the caramel.
With a teaspoon, spoon little bit of the caramel topping in the brownie hole. Sprinkle some crushed candy bar on the caramel then top with whip cream!

Tiramisu Mini Muffins

mmm Tiramisu Mini Muffins!! My picture just doesnt do it much justice! These are realllly good! I have never made a tiramisu before so muffins is a first too. I have a team meeting and I asked for some ideas. Team mate gave me a cookbook to look at. My manager LOVES tiramisu, so when I came across mini tiramisu muffins, I had to make them! For the espresso...I hate coffee let alone espresso taste. I wanted it an actual tiramisu taste but not strong, so I used Maxwell House Maxicino Hazelnut instant singles. Just one singled I used.
1 pkg Cake yellow Mix (I used butter pecan actually)
2 eggs
1 1/2 cups Milk
1/4 cup Oil
1 275g tub Mascarpone Cheese (in your italian cheese section)
1 cup Whipping Cream (chilled)
1 tsp Vanilla
5 teaspoons Instant Espresso powder (or instant flavored (mocha coffee)
1 cup warm Water
3 tbsp Icing Sugar
2 tsp Coco (or shaved chocolate)
Preheat oven 375F
In a bowl, beat the cake mix, eggs, milk and oil together. Basically according to the box directions.
Grease mini muffin tin and bake muffins for 5-7 minutes or until toothpick approved. Cool, poke holes and air dry. Makes 48 mini muffins.
In another bowl, with hand mixer, add whipping cream liquid, vanilla, 1 tsp of instant espresso powder and icing sugar. Whip until its light and fluffy, about 5 minutes.
In a small bowl, whip up the mascarpone cheese light and fluffy like. Add a spoon full of cheese in the whipping cream. Whip together until light and fluffy. Then fold in the rest of the whipped cheese with a spatula in the whipping cream, blend.
Add 4 tsp instant espresso or coffee in the warm water, mix. Honestly test the flavor of it and make sure you like it cause the muffins get dipped in it. Once espresso mixed, dip the muffins to absorb some of the espresso flavor.
Top each muffin with tiramisu cream and sprinkle with coco or chocolate shavings. I grated 1/2 cup of chocolate chips and sprinkle some in espresso, little little bit. Tossed and topped the muffins.

Chocolate Dream Dessert
Chocolate pudding, whipped cream with chocolate cake and strawberries! Sinful!
Chocolate Cake
2 cups sugar
1 3/4 cups flour
3/4 cup baking cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
3/4 cup boiling water
Heat oven to 350°F
Grease and flour two 9 inch round baking pans or one 13x9 inch pan.
In large mixer bowl, stir together dry ingredients. Add eggs, milk, oil, and vanilla; beat on medium speed for 2 minutes. Stir in boiling water by hand (batter will be thin). Pour into prepared pan.
NOTE: I usually use between 2/3 & 3/4 cups. The cake is still very moist but it doesn't seem to "fall" as much as it cools. This might have to do with our high humidity or brand of flour or other factors so I don't know if it will work for everyone.
Bake 30 to 35 minutes for round 9-inch pans, 35 to 40 minutes for rectangular pan or until wooden pick inserted in center comes out clean. (Do not use 8-inch pans or the batter will overflow). Cool 10 minutes; remove from pan to wire racks.
Chocolate Pudding
2 cups Skim Milk
1 pkg Jello Chocolate Pudding mix
Place in a bowl and make according to package. Beat for 5 mins and chill for 5 mins.
Whip Cream
1 cup Whipping Cream
1/4 cup Icing Sugar (powdered)
1 tsp Vanilla
Place in a bowl and whip for 5 mins until light and fluffy.
8 fresh Strawberries sliced.
Crumble cake add strawberries then pudding and whip cream. Sprinkle more crumbled cake on top. Enjoy!

Best Steak Marinade in Existence

Best Steak Marinade in Existence, And I have to agree. Each time this is used, I always have the best steak, ALWAYS! I had bbq steak and those stuffed mozza potatoes last night...drool hehe
1/3 cup soy sauce
1/2 cup olive oil
1/3 cup fresh lemon juice
1/4 cup Worcestershire sauce
1 1/2 tablespoons garlic powder
3 tablespoons dried basil
1 1/2 tablespoons dried parsley flakes
1 teaspoon pepper
1/4 teaspoon hot pepper sauce (optional)
1 teaspoon dried minced garlic
Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add garlic and hot pepper sauce, if desired. Blend on high speed for 30 seconds until thoroughly mixed. Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.

Stuffed Mozza Baked Potato

These are done in the microwave and then in the oven to melt the mozza! Easy and delicious!
3 large Red Potatoes(scrubbed and poked with fork)
1 cup Baby Spinach (finely chopped)
1/4 cup Bacon Bit
1/4 tsp Salt
Pepper
1/4 cup Butter
1/3 cup Milk
3/4 cup Sour Cream
2 cups Mozza Cheese
My microwave is awesome. It has a bake potato feature. Press the Potato button 3 times for the 3 potatoes and boom 9 mins and 30 secs later I have baked potatoes.
Once potatoes are done, cut them in half. With the spoon, carefully scoop the inside of the potato out. I use a knife and cut out an outline then scooped and place in a bowl. Add butter, milk, salt, bacon bits, sour cream and spinch. Mix together.
Preheat oven 400F
Spoon filling in the potatoe shells evenly. Top with mozza and bake until cheese is melted.

Garlic Onion Fried Haddock with Bacon

Supper soo good tonight. This is pan fried garlic haddock with my mozza baked potato from above!
3 pieces of Haddock (cut in 3 inch strips)
3 Garlic cloves (diced)
2 small Onions (chopped)
1/4 cup Butter
Pepper
Salt
Bacon Bits
On medium high heat in a skillet, melt butter. Add in onions and then garlic. Fry and stir for 5 minutes until garlic turns golden brown. Place fish on top of the garlic/onions. Sprinkle top of fish with salt and pepper.
Turn stove down to medium heat and cook fish for 3 minutes then flip and cook for 3 more minutes or until you think its cooked. Spread the fish apart from the onions and top each piece of fish equally. Top with bacon bits.

Strawberry Shortcake

Made this for dessert for Easter Dinner!! Its was sooo good =) You can use any whipping cream, whether its in the tub, can, carton to whip up yourself or even the nasty powdered whipping cream where you add milk. I like to add vanilla to my cream before whipping it up!
1lb Fresh Strawberries (sliced)
Whipping Cream
Cut the tea biscuits in half, place whipping cream in the bottom, add tons of sliced strawberries add more whip cream then top with top half of biscuit! Enjoy!
Tea Biscuits
2 cups flour
2 tbsp sugar
1 tsp salt
4 tsp baking powder
1/2 tsp cream of tartar
1/2 cup butter (cold)
1 cup cold milk
Preheat oven 450F
In a bowl add the first 5 ingredients. Mix thoroughly and then cut in butter until crumbly. Make a well in the middle of the bowl and pour in milk. Stir quickly to combine until the dough turns soft.
Form in a ball on lightly floured surface. Knead gently 8-10 times. Roll with rolling pin about 1/2 to 3/4 inch thick or half the thickness you want it to be. Then cut with small round cookie cutter.
Place on greased cookie sheet close together for soft sides or apart for crisp sides. Bake at 450 for 12 to 15 minutes. Makes 10!
Tip: Brushing biscuits with milk before baking will produce a pretty brown top.

Triple Chocolate Brownie Cookies

Craving chocolate and had left over cream cheese so I made brownie cookies with whole wheat flour!
1 cup Butter
1 cup Cream Cheese (softened)
1 cup Brown Sugar
1/2 cup Sugar
1 tsp Vanilla
4 Eggs
2 1/2 cups Whole Wheat Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Salt
1/2 cup butter (melted)
1 cup Coco
1 bag Semi Sweet Chocolate Chips
1 cup Milk Chocolate Chips
Preheat oven 400F
In a bowl, cream butter, cream cheese, sugar and brown sugar. Whisk up the eggs and vanilla together, blend really well in the butter and sugar.
In a pot, melt butter, add in coco. Mix.
In another bowl, blend flour, salt, baking powder/soda, chocolate chips together. Add in coco butter mixture and mix really good.
Grab your baking stone or cookie sheet. Spoon dough on pan and bake for 8 minutes. You can freeze left over dough if you don't want to bake them all. Cool on cooling rack.

Blueberry Pastry

This is puff pastry rolled out and oozing with cream cheese and blueberries. Weird looking danish? lol Sooo good though!
1/2 pkg Puff Pastry (tenderflake)
1/2 cup Cream Cheese
1 tbsp Honey
1 tbsp Strawberry Jam
1/3 cup Pecans (crushed)
2 cups Blueberries (frozen)
1 tbsp Corn Starch
1 tbsp Brown Sugar
Preheat oven 425F
Thaw pastry according to package. Roll dough out on lightly floured surface. 9x12.
In a bowl, cream the jam, honey and cream cheese with the pecans.
In a pot, on high, boil blueberries until thawed and juicy. Mix brown sugar and corn starch together then add to blueberries and stir until thickened.
Spread cream cheese mixture on the pastry. Top with the blueberries in a line in the middle of pastry.
Cut 1/2 inch strips on each side of the dough. Fold over, criss-crossing the pastry over the blueberries and bake for 25 minutes or until golden brown.
